Gomasio, a term of Japanese origin derived from “goma” (sesame) and “shio” (salt), is a condiment composed of toasted sesame and sea salt, ground together. The ratio is usually 12 parts sesame to 1 part salt, although it can vary between 8: 1 and 15: 1, as common extreme ratios.
MIMASA’s organic gomasio keeps the proper proportion between sesame and salt. However, it can also be prepared at home using MIMASA’s suribachi mortar, made in Japan, a specific tool for this need. As far as possible, the use of electric grinders should be avoided due to their electromagnetic vibrations and because a union between the sesame fats and the grains of salt is not obtained.
Gomasio benefits from the qualities of its components (fats, proteins and minerals from sesame and trace elements from salt), so its daily use is recommended. It is the table condiment par excellence of a balanced diet. It favors the secretion of digestive juices, stimulates the entire metabolism, fortifies the nervous system, is slightly diuretic and regenerates the intestine. It tones, strengthens and allows you to add salt to dishes without causing thirst.
Gomasio presents a great quantity of nutrients. It provides high-quality lipids, since sesame is made up of 52% unsaturated fatty acids (omega 6 and lecithin) that help regulate the level of cholesterol in the blood. It also offers proteins that supplement those of the cereals that flavor, vitamins (E, K, group B, folic acid, biotin, inositol and choline) and minerals with a high content of calcium.
One of the most remarkable properties of gomasio is its ability to strengthen the body, being alkalizing of the blood. Many times, due to a state of weakness, the body and especially the blood become acidic, which can make us feel weak, without muscle tone and leave us with less defense capacity against possible infectious agents. In gomasio, sesame oil surrounds the tiny grains of salt, which, in this way, can pass the intestinal wall and achieve alkalization of the blood flow more or less quickly, neutralizing its acidity and strengthening the body.
FORM OF CONSUMPTION
Gomasio is the ideal complement to cereals and can also be used in salads and other dishes. It is advisable to eat it at the beginning of the meal, since its salt intake will stimulate the production of hydrochloric acid in the stomach, favoring its functioning. It can also be used to decorate or flavor breads.
It should be taken in small quantities, sprinkling it on cereal dishes, vegetables, salads, or spreading a thin layer on a slice of bread with oil.
People with hypertension should watch the consumption of Gomasio, given its salt content.
